Apple Salmon Salad

Ingredients
  • 4-5 oz Salmon
  • 1 Lemon
  • 1 Apple
  • 1 tbsp Brown Sugar
  • 2 tsp Dijon Mustard
  • 4 tbsp Plain Greek Yogurt
  • Arugula, Mixed Greens Salad Mix
  • 1 oz Almonds

  1. Heat drizzle of olive oil on a pan over medium-high heat. Pat salmon dry with paper towel. Season with salt and pepper. Add to pan skin-side down. Cook to desired doneness, about 3-6 mins per side.
  2. Halve lemon and core apple. Thinly slice apple.
  3. Place brown sugar in a bowl. Squeeze in one half of lemon and stir to dissolve sugar. Add mustard and yogurt, salt and pepper to taste.
  4. Place salad mix in a large bowl, add apple and almonds. Squeeze more lemon and drizzle the olive oil to toss and combine.
  5. Place cooked salmon on top and drizzle with dressing and voila!
